Cooling Cucumber Limeade

There’s logic behind the saying, “Cool as a cucumber”. Cucumbers have quite a wonderful cooling effect on the body, so refreshing on a hot summer day. This recipe combines our cool cucumber with mint, lime and ginger for a taste sensation.

Ingredients

 2 medium organic cucumbers, sliced

½ cup fresh lime juice from about 7 limes, or natural bottled

1 inch of fresh ginger, peeled and minced

½ cup packed spearmint leaves

mint leaves for serving

3 cups pure water

Stevita stevia drops to taste, about 13

5 cups of ice

Directions

Blend all at high speed for approximately 15 seconds. Strain through a fine mesh sieve, pressing out juice with a rubber spatula. Serve over ice, letting set a few minutes, so the ice can melt a little. Garnish with mint leaves, and lime slices cut halfway through and pressed onto the rim of the glasses.
